Turnip

Turnip: is one of the oldest cultivated vegetable, before the spread of potatoes, the highly nutritive turnip, was among the most important staple food.  The Chinese traditionally roasted the turnip because the high temperatures increased the sweetness by converting the starch to tasty, brown pyrodextrins in the crisp outer flesh. The Japanese preferred to pickle.  Simply boiling the vegetable seems to have come from English-speaking countries.  You can peel them with a potato peeler, then cut into small chunks, but just cleaning and slicing without peeling is fine too as the entire vegetable is edible.

Ingredients:
· 1 cup green
· ·peas, shelled
· 2 carrots, peeled, sliced
· 1 turnip, peeled, sliced
· 6 cups water, boiling
· 1 cup milk, scalded
· 2 tablespoons butter
· Seasonings to taste

Instructions
Mince all of the vegetables; using a food processor is recommended.
Put in stew pan with all other ingredients.
Cook for about 20 minutes.
Then serve
